A large pan of lentil soup

Ingredients

  • 1 tray of fresh turmeric
  • Curry powder
  • 1 bag of lentils 300 g
  • A can of tomato puree
  • 3 red bell peppers
  • 12 small tomatoes
  • 1 bag of sliced onions
  • 3 garlic cloves
  • 3 bags of diced sweet potatoes
  • 2 cans of coconut milk
  • Small tray of fresh basil
  • 6 Zonnatura stock cubes

 

Cooking method

  • Fill the pan with water and boil the lentils and the six stock cubes until cooked.
  • Sauté the onions in a frying pan.
  • When the onions have started to colour, add the pressed garlic cloves along with the fresh peeled turmeric, either sliced or pressed in the garlic press.  
  • Add some curry powder and briefly sauté the tomato paste.
  • Chop the tomatoes and peppers and grill them briefly in the oven as this adds more flavour to the vegetables.  You can also add some garlic and basil to this.
  • Add the diced sweet potatoes to the lentils.
  • After 20 min, add the grilled peppers and tomatoes. Allow this to simmer for a while.
  • Then add the onions and spices to the pan along with the coconut milk.  
  • After half an hour, puree the soup using a hand blender.
