Recipe for
A large pan of lentil soup
Ingredients
- 1 tray of fresh turmeric
- Curry powder
- 1 bag of lentils 300 g
- A can of tomato puree
- 3 red bell peppers
- 12 small tomatoes
- 1 bag of sliced onions
- 3 garlic cloves
- 3 bags of diced sweet potatoes
- 2 cans of coconut milk
- Small tray of fresh basil
- 6 Zonnatura stock cubes
Cooking method
- Fill the pan with water and boil the lentils and the six stock cubes until cooked.
- Sauté the onions in a frying pan.
- When the onions have started to colour, add the pressed garlic cloves along with the fresh peeled turmeric, either sliced or pressed in the garlic press.
- Add some curry powder and briefly sauté the tomato paste.
- Chop the tomatoes and peppers and grill them briefly in the oven as this adds more flavour to the vegetables. You can also add some garlic and basil to this.
- Add the diced sweet potatoes to the lentils.
- After 20 min, add the grilled peppers and tomatoes. Allow this to simmer for a while.
- Then add the onions and spices to the pan along with the coconut milk.
- After half an hour, puree the soup using a hand blender.
